I adore picnics. The blue sky, the sun, and simply just relaxing on a rug with good food.
If you follow me on Instagram, you would have seen a few special treats that I usually pack in a picnic basket and thought I’d share some ideas with you! As well as a recipe for mini quiche lorraines that will sure delight! Love a one bowl wonder!
Mini Quiche Lorraines
2 shortcrust pastry sheets, thawed
1 brown onion, diced
4 tbsp cheddar cheese, grated
4 rashers of bacon (small, diced)
Parsley flakes (Optional)
Salt & pepper
1, Preheat oven to 180 degrees Celsius.
2. Cut out circles from the pastry sheets and mould into a 12 hole muffin pan.
3. Sautee the onion & bacon.
4. In a bowl, whisk eggs, cheese, parsley flakes, salt (a only used a pinch as bacon is quite salty itself) and pepper together.
5. Add the bacon mix to the egg mixture and stir.
6. Fill the pastry with egg mixture.
7. Bake for 20 minutes.
These are great for parties as well! So naturally, my special dear took me to Centennial Park which had great views and photo snapping opportunities.
I got these goodies from Ruby’s Diner (Blog post on that up soon too !) Cause you know, Alice makes people drive to shops where she can pick up cake. Classic.
I also can’t live without strawberries.
What’s a picnic without sandwiches? Inside these babies were Smoked Salmon, avocado, spanish onion, bocconcini, lettuce and a Garlic tomato relish/c Mango Chutney from Beerenberg.

I love my dips with carrot & celery sticks, as well as vintage cheddar cheese with crackers.
Dukkah is also the greatest creation ever. Nutty and spicy with bread and olive oil.
