Glass Brasserie – Luke Mangan
Up in the Hilton with double ceilings and open spaces are closely knit tables in a dim-lit room. I was lucky enough to be invited to a wonderful 21st birthday and had the opportunity to have the Degustation menu!
This soft, silky, melt-in-your-mouth sashimi was a hit! The punch of ginger and sharp and slightly salty taste of feta brought out the sweetness of the kingfish and was one of the best dishes of the night.
This dish is also one of the Glass’ signature dishes. The crab was also soft and sweet. The mushrooms and herb salad was a fresh addition to the omelette and the miso broth itself had a good depth of flavour and elevated the dish even more!
Snapper fillet, crispy prawn and thai salad.
Aside from the waiter forgetting what he just served this dish was just so-so. One of the least impressive dishes of the night. The fish was overcooked and chewy, the “crispy” prawn which was supposed to be a “tempura” prawn was coated in a slightly sweet batter and was over fried. The salad itself was quite simple but had some decent flavours.
This quail was cooked to perfection and had a solid, smokey, after taste to it. The crunchy and nutty grain added a good contrast in textures and the prune was an interesting combination. The sauce and almond cream had a smooth consistency and was slightly salty but extremely delicious!
There was only one bad thing about this dish. The parsley puree. (Personal taste of course.) It was too bitter for me and you can really taste the parsley !!
The lamb was cooked medium rare, soft and juicy! The chip on top was pretty cute!
French, Italian & Australian cheese. served with apples, grapes, quince and truffle honey.
I don’t remember the names of the cheese unfortunately. Too many and too hard to remember.
Coconut panna cotta with pineapple, berries and fennel cream.
Smooth and silky panna cotta. Heavy on the coconut and it was DELICIOUS. It was to die for. Enough said.
Glass Brasserie. You make me happy.
Had some of their cocktails as well. They are good too!
